The 7mm mag will take anything in Noth America, most anything in Africa. Plus if you get the added bonus of ever going moose hunting you could lie to your wife and say you need a new rifle.

From what you have now, the next logical step up would be the 7mm Remington Magnum. Like Bill K said it is capable of taking any North American game. The only animals it would be considered marginal for would be the Alaskan giant Bear. Your .308 is plenty big for hogs and 7mm Mag takes you up through Elk and Moose. I would also consider the 7mm WSM, it has slightly better ballistics than the 7mm Rem. Mag. Since the WSM is a short action cartridge, you might like the balance of the rifles available more to your liking and if you like, it would be a better choice for downloading to the 7mm-08 level for target shooting or Whitetails when the extra punch isn't necessary. ;)

.338 over the 7mm Mag as your next. Better at shoulder busting (elk etc) should it come to that specific usel--come to think of it the .300 WM also better at that; otherwise covered well by the .308 re most anything else the 7mm can do. 7mm not "enough" of a step from what you have, esp if the .308 is in a 22-24" format vs a shorter (18-20") "carbine."
