Are all Kimber 1911 stainless steel?

The frames for their "Carry" line have aluminum alloy.
I have one, not a big fan of the frame material.
I don't mind a pistol with some character but I don't like knowing that a slip of my hand with a paperclip vs gun while cleaning or swapping barrels will end with the paperclip the clear victor.
Still the gun shoots great and is one of my favorites.
My advice is only opt for aluminum if you actually intend to carry it. It is hard to justify a range or HD only gun that can shed its finish with ease and be gouged by keys and such.
I baby mine so it still looks like new, just a little holster wear.

If you are talking about the mating surfaces between the slide and the frame, no. The finish on the mating surfaces lasts a very short time. They wear into each other and basically machine themselves to a good fit over the course of your first few hundred rounds, what is referred to as the "break in" period. After that the process slows down dramatically and is offset by lube more.
