Ruger single six birdshead conversion

Hello all, I picked up a raw Ruger birdshead grip frame for my single six. I've never done any type of gunsmithing and I'm wondering how difficult this would be if I choose to do the work myself. From my research it's mostly sanding and fitting? Is this something I could do on my own or is it best left to a professional? What about the internals? My pistol is blued so that adds another step as well. For grips I plan on making them myself and might even try making stag grips.

If it ends up being a job for the professionals I'll go all out and get a action job done and add a 8 shot cylinder.
