I was watching a cooking show reciently where they were cooking quail that still had the skin on, similar to a whole chicken that you find at the grocery store. Does anyone know how to clean them like that? I've always just ripped the skin off and kept the leg and breast meat.

As with chickens or turkeys, dip them briefly in very hot water. It makes the feathers and the pin feathers much easier to remove.

:) or pull the feathers out as the bird is still warm, just after harvested. they come out quite easily. good hunting.

After you pluck the birds you can take rolled up paper, set it on fire, and very quickly burn any "stubble" left on the bird.

Just don't do this in your kitchen or your wife will be quite upset.
