Best Defense Ammo in 7.62's

I've owned handguns for a while and just picked up my first rifles. I have a Chinese Type 53 in 7.62x54R and a Yugo SKS in 7.62x39. I don't plan on using these for self/home defense, that's what my handguns and shotguns are for. I was just wondering that if I had to use them against a person or animal what would be the best type of bullet for that FMJ, soft point, hollow point, etc?

Normal soft point is what I keep around... Seems like it would stop anything I shot fast and should I need to go before a jury my box of shells has a deer on it...

Any HD gun should be loaded with normal ammo nothing exotic... Last thing you need is to have the box of black talons (or some other sinister sounding name) shown to the jury

Yeah, after some research I unloaded the Black Talons and loaded Federal Premium Hydra-Shok "Personal Defense" rounds in my carry pistol.
